Stainless San-Mai with Alloy Banding: The high-performance carbon core is jacketed in premium stainless steel for low maintenance on the serving line. Look closely at the cladding to see subtle, beautiful alloy banding—a fingerprint of the steel's structure and the forging process.

Performance Convex Edge: Ground with a slight, continuous convex taper down to the apex. This provides incredible structural strength at the very edge while reducing friction and preventing meat from suctioning to the blade faces.

The Making of This Knife

Crafting the Art of the Presentation Slice
The carving knife is the ultimate ceremonial tool in the kitchen; it is the blade that finishes the work hours of cooking have put into a meal, right in front of your guests. For this 285mm piece, the challenge was balancing massive length with absolute agility.

Forging a blade of this scale using a San-Mai construction requires immense control to keep the ultra-hard ApexUltra core perfectly centered down the entire length of the steel. As we meticulously ground the blade into a thin convex profile, the beautiful, undulating boundary line between the stainless jacket and the carbon core was revealed. Look closely in the right light, and you can see the ghost-like patterns of alloy banding locked within the cladding itself—a true mark of custom, small-batch steelcraft.

To complement this long, elegant silhouette, we steered away from standard handle shapes to craft a highly geometric, tapered hexagonal WA handle. It shifts the balance point perfectly to the heel, making this massive 285mm carver feel surprisingly weightless, nimble, and authoritative in the hand.
