"A 230mm Gyuto is the flagship of any knife roll. With this piece, I set out to push the limits of performance metallurgy by heat-treating an ApexUltra core to a glass-shattering 65 HRC. To ensure a blade this hard glides through food without sticking, we engineered a smooth, rounded compound S-grind. It balances extreme edge retention with effortless, low-friction slicing."

230mm Kiritsuke-Gyuto Hybrid Profile: Combines the versatile curve and length of a traditional chef’s knife with an aggressive, razor-sharp K-tip for surgical precision work.

Extreme Hardness ApexUltra Core (65 HRC): Heat-treated to a staggering 65 HRC hardness. ApexUltra provides world-class tungsten and vanadium carbide structure, delivering absurdly long-lasting edge retention.

Softened Compound 'S-Grind' Geometry: Features a subtle, rounded convex-to-hollow transition down the blade face. This creates air pockets during cuts to shed food, eliminating drag and wedging.

High-Contrast Stainless San-Mai: Low-maintenance stainless cladding frames the dark core, giving the blade a dramatic two-tone finish.

Sculpted Quilted stabilised wood Handle: Ergonomically faceted to support a secure pinch grip, highlighting deeply figured golden burl grain paired with an angular dark bolster.

Engineering the Ultimate Flagship

In the world of custom cutlery, the Gyuto is the ultimate test to compare maker's skill with the competition. At 230mm, the blade must be long enough to tackle large prep sessions, stiff enough along the spine to feel commanding, yet thin enough behind the edge to cut without resistance.

The foundation of this piece is ApexUltra steel pushed to 65 HRC. Running a core this hard requires immaculate temperature management during forging and quenching to prevent stress fractures while maximizing edge stability. To complement this ultra-hard core, we ground a softened compound 'S-grind' into the blade face. By gently rounding over the hollow transitions, the geometry sheds dense produce like onions and potatoes while maintaining high structural strength along the spine.

Finished with a high contrast oil spill black core to satin silver cladding, this 230mm Gyuto is a true apex predator for the kitchen—built to handle high-volume line work or serve as the crown jewel of a private collection.
