"Forging a 360mm blade is the ultimate test of endurance and metallurgical control. At this length, there is zero margin for error; a fraction of a degree in the heat treat or grind will ruin the entire piece. With this Sushi Sword, we created a low-layer woodgrain twist Damascus, paired with an edge geometry engineered across all 360 millimetres to deliver an effortless, single-draw slice through delicate proteins."

360mm Command Profile: Exceptional blade length engineered specifically for traditional single-stroke slicing (Hiki-kiri) of raw fish, large roasts, and sashimi, preventing any sawing motion that crushes delicate food fibers.

Low-Layer 80CrV2 & 15N20 Twist Damascus: Forged with a lower layer count to let the bold, organic contrast of the steel pattern breathe. The resulting wave-like twist mimics flowing water across the entire 14-inch blade face.

Optimized 60/61 HRC Heat Treatment: Delivers the perfect harmony between razor-sharp edge holding and micro-flex toughness required for a long, thin blade.

Low-Friction Edge Geometry: Gradients across the entire 360mm are meticulously hand-tuned to reduce drag and prevent delicate raw fish from sticking to the blade.

Flame-Red Chestnut Burr Handle: Crafted from deeply figured stabilized chestnut burr dyed in rich crimson tones, adding a warm, luxurious contrast to the dark Damascus steel.

The Making of This Knife

The Art of the Single-Draw Slice

In high-end sushi preparation, the quality of a cut directly impacts texture and flavor. To keep raw fish silky smooth, the blade face must glide through in one continuous, fluid pull-cut without sticking or tearing.

Designing a 360mm slicing sword to meet these standards was a monumental process. A blade of this length requires absolute perfection during the forge-welding and quenching phases to eliminate internal stresses and keep the spine dead straight. We opted for a low-layer 80CrV2 and 15N20 twist pattern, giving the steel a striking, marble-like appearance that flows down to the apex.

Every millimetre of the bevel was then hand-ground to achieve ultra-low cut resistance while maintaining strength along the spine. Finished with a fiery red chestnut handle fitted via our heirloom removable system, this 360mm Sushi Sword stands as one of the most ambitious and refined centrepieces ever produced in the KWB forge.
