At 125mm, it delivers the full board contact and flat edge of a traditional Japanese vegetable cleaver, but with the speed and agility of a petty knife. We clad an 80CrV2 high-carbon core in stainless steel and let the carbon migrate into the stainless just enough to create a deeply mesmerising pattern, like water evaporating into steam."

Forging process

The Making of This Knife

Precision in Miniature

The Nakiri is a staple for vegetable lovers, but standard 165mm to 180mm cleavers can sometimes feel overly large for quick, delicate prep sessions. Scaling down this classic profile into a compact 125mm blade was an exercise in pure refinement.

Forging the 80CrV2 core into a stainless jacket provided a foundation of strength and stain resistance. As the semi-convex bevels were ground, an extraordinary, mist-like lamination pattern revealed itself where the two metals bond. The white line separating the dark core from the stainless cladding is pure nickel.

We paired this high-performance blade with a deeply figured chestnut handle, faceted for comfort in a forward pinch grip. By engineering the handle with our removable heirloom fit-up, this mini-Nakiri is built to serve as a daily workhorse on the prep board today and remain pristine for generations to come.
