"You really can't beat a thin wide nakiri for the joy of prepping veg, even for serving boneless meat - unless you're lucky enough to have a dedicated knife for that. With this piece, my goal was to combine a wide blade surface with a highly technical double hollow ‘S-grind.’ It elevates the physics of the cut from a simple slice to an effortless, frictionless glide, all while showcasing the organic chaos of the nickel Damascus cladding."

The 'S-Grind' Geometry: Engineered with a double hollow grind. The concave sections create an air pocket between the blade and the food, drastically reducing surface tension and ensuring dense vegetables slide right off the blade instead of sticking.

High-Contrast Damascus Cladding: A meticulous forge-welding of 80CrV2 and pure nickel creates a striking, topographical aesthetic. The pure nickel layers remain bright and reflective, while the 80CrV2 etches dark, framing the cutting core beautifully.

80CrV2 High-Carbon Core: Known in the custom knife world as 'tough as nails' steel. It takes a razor-sharp, laser-thin edge and holds it through demanding prep sessions, while remaining surprisingly easy to maintain on the stones.

Sculpted Ergonomic Handle: Features a beautifully figured, stabilized wood burl paired with a dark, angular bolster. The handle geometry is specifically designed to provide comfort in a pinch grip, offering maximum control over the large blade height.

The Making of This Knife

The Evolution of the Vegetable Cleaver
The Nakiri is a staple of Japanese culinary tradition, prized for its flat profile and square nose that ensures full board contact with every stroke. However, when working on a larger scale with starchy summer vegetables like potatoes, squash, or root crops, traditional blades often suffer from "sticking."

For this piece, the focus was entirely on mastering blade geometry to overcome this flaw. Forging the 80CrV2 core with pure nickel Damascus cladding provided the canvas, but the real magic happened at the grinder. Executing a perfect double hollow 'S-grind' requires an immense amount of precision; too deep, and you compromise the strength of the blade; too shallow, and the food release fails.

Korben meticulously ground the blade to leave a robust spine for weight and balance, transitioning into a double hollow pocket to shed food, and finally tapering to a screamingly sharp, thin edge. The result is a large, commanding Nakiri that looks like a museum piece in its custom KWB presentation box, but acts as a pure high-performance workhorse on the prep line.
