The Evolution of the Vegetable Cleaver
The Nakiri is a staple of Japanese culinary tradition, prized for its flat profile and square nose that ensures full board contact with every stroke. However, when working on a larger scale with starchy summer vegetables like potatoes, squash, or root crops, traditional blades often suffer from "sticking."
For this piece, the focus was entirely on mastering blade geometry to overcome this flaw. Forging the 80CrV2 core with pure nickel Damascus cladding provided the canvas, but the real magic happened at the grinder. Executing a perfect double hollow 'S-grind' requires an immense amount of precision; too deep, and you compromise the strength of the blade; too shallow, and the food release fails.
Korben meticulously ground the blade to leave a robust spine for weight and balance, transitioning into a double hollow pocket to shed food, and finally tapering to a screamingly sharp, thin edge. The result is a large, commanding Nakiri that looks like a museum piece in its custom KWB presentation box, but acts as a pure high-performance workhorse on the prep line.
